Light and airy because they are made from crustless bread, panko bread crumbs stay flakier and produce a thicker, crispier crust than frying with regular bread crumbs. Foods stay crunchier longer since the flakes don't absorb as much oil. Once used only in Asian dishes, the attributes of panko bread crumbs make them a perfect choice for breading chicken, seafood, thin cutlets or cutlets or vegetables.
