Orecchiette, Italian for 'little ears,' features a thin rim and thicker center, expertly crafted by La Molisana to cradle sauce. Each disc is pressed against grooved boards, creating a slightly rough interior that traps oils and seasoning. After eight minutes in salted water, the cups remain firm yet tender. Traditionally paired with sausage and broccoli rabe, but chunky vegetable sauces or bean stews also work well. Stir occasionally during cooking to prevent stacking. For baking, par-boil five minutes, layer with sauce, top with cheese, and finish under a high broiler for crispy edges. Store dry pasta in a tight-lidded canister to prevent absorption of pantry aromas. Rustic, hearty, and proudly southern Italian, Orecchiette No. 30 adds regional flair to everyday meals.
